Pea and Broccoli Soup

In the first wintery, dark months of the year there is absolutely nothing I love more than a comforting bowl of soup for lunch. The feeling of cold hands against a warm, steaming bowl just can’t be beaten!

My personal favourite flavour to cosy up with is pea and broccoli soup. It’s made with ingredients that are super easy to stock up on. I personally always have peas in the freezer, broccoli in the fridge and a stock cube somewhere in my cupboard, so this is the perfect meal to whip up on days when convenience is a priority. Not only is this dish soup-er easy pea-sy to make (pardon the pun!), it also leaves you feeling really nourished. It’s high in gut-healthy fibre, vitamins A, C and K to name a few, and contains loads of immune system boosting antioxidants!

This simple soup is still surprisingly filling. I’m a huge pea fan because they taste delicious (obviously), but they are also an easy way to bulk out a meal to make it more satiating, as well as being a great source of plant based protein. This recipe also includes Vivo’s Ritual Unflavoured protein to give it a complete amino acid profile.

Warm yourself from the inside out by curling up with a bowl of this tasty soup. You could even double up on ingredients to freeze and store for another chilly evening!

Ingredients

  • 1 cup broccoli
  • 1 cup peas
  • 1 tbsp Ritual Unflavoured
  • 1 veg stock cube
  • 2 celery sticks
  • 1 garlic clove
  • ½ tsp onion powder
  • Black pepper, to taste
  • Pinch of salt

Method

  1. Add all the ingredients except the protein powder into a soup maker with the required amount of water.
  2. Once ready, mix in the protein powder.
  3. Serve in a bowl with a drizzle of dairy-free cream, a dash of olive oil, and peas to garnish.

    What if I don’t have a soup maker?”

    No problem! This is a super easy recipe to make with or without a soup maker. Simply:

    1. Chop the veggies and add them into a saucepan.
    2. Add the rest of the ingredients except from the protein powder, along with 2-3 cups of water and bring to the boil.
    3. Reduce to a simmer, cover and cook for around 10-15 mins, or until soft.
    4. Once ready, add the protein powder and blitz the soup mixture with an immersion blender or a regular blender until completely smooth.
    5. Serve in a bowl with a drizzle of dairy-free cream, a dash of olive oil, and peas to garnish.
    6. Enjoy!
