Salted Caramel Protein Popcorn Blondies

What could be better than popcorn, salted caramel and blondies? All three of those things combined, that’s what!

My latest recipe really is the ultimate indulgent treat, whilst being packed with nutritious and whole food ingredients. The blondies them selves are a super simple combination of nuts, oats, dates, peanut butter and Vivo Life's PERFORM protein powder.. and that’s it! But they taste so sweet and delicious, that it’s hard to believe that they’re the only ingredients!

Protein Popcorn Blondies

These would be a great snack to whip up if you’re having friends round, as you can get all fancy with the popcorn decoration and make them look really impressive. I guarantee that people will surprised when they find out what they’re made of! Not only do they satisfy that sweet tooth, but these blondies also contain our new plant based protein (which is SALTED CARAMEL flavour by the way) and some great healthy fats from the peanut butter and cashews!

Salted Caramel Protein Popcorn Blondies

Popcorn protein blondies

INGREDIENTS

For the caramel sauce:

  • 2 tbsp peanut butter
  • 2 tbsp maple syrup
  • Splash of almond milK

Toppings:

  • Salted popcorn and coconut cream

METHOD

1) Add the cashews and oats into a food processor and pulse for a few seconds until they are slightly crushed. Add in the remaining blondie ingredients and blend so that everything is well combined and forms a sticky dough like mixture.

2) Transfer this mixture into a lined dish and firmly press down to create a smooth surface. Place into the freezer for a few hours to set.

3) To make the peanut butter sauce, combine the peanut butter, maple syrup and a splash of almond milk and mix. Gradually add more almond milk until you’re left with a thick, but pourable consistency.

4) Slice the blondies into pieces and top with a dollop of coconut cream, some popcorn and the peanut butter sauce.
