Pumpkin Spice Cashew Butter Fudge Bars

We've all heard about 'bulking season' - the idea of letting yourself pack on a few pounds over the winter, in the hopes of increasing total muscle mass.

I don't really believe in that, and don't think it's that healthy...but when I see recipes like these, I am 100% game to jump on that train and 'bulk' like no ones business.

These fudge bars are absolutely delicious! Not only are they tasty, but they're pretty good for you as well. This recipe uses our vanilla RITUAL protein powder, for a boost in protein without a bitter taste.

This one will take around an hour, so perfect for a lazy Sunday! Brew a nice mug of coffee and enjoy.

Pumpkin spice cashew butter fudge bars

Ingredients:

1 cup oat flour (P.S - you can make your own with some oats and a blender!)

2 scoops Vivo Life Vanilla Perform

1 tbsp pumpkin spice

1/2 cup maple syrup

1/2 cup cashew butter

2 tbsp pumpkin puree

1/4 cup chocolate chips (optional)

1/4 cup water

Method:

1.Mix together the oat flour, vanilla protein and pumpkin spice and set aside.

2. In a saucepan, heat maple syrup, cashew butter and pumpkin puree until smooth and well mixed together.

3. Pour into oat flour mixture and combine. Add 1/4 cup water and mix in further to smoothen out the mixture.

4. Press the dough into a lined loaf pan and sprinkle chocolate chips if using (optional) and press into the dough.

5. Freeze for 60 min to set and then cut into squares and enjoy. Store and keep in the freezer.
